Vegan, dairy-free, gluten-free, nut-free, soy-free.

I love these little treats for a quick energy boost in the late afternoon, before a workout or just as a little treat after a meal. They are refined sugar free and only contain wholefoods ingredients, so ideal as a healthy alternative to the usual sweet treats you can buy in the shops.

You can keep the truffles in the fridge for up to a week (if you can make them last for so long: I cannot! 😉 ).

40 g shredded coconut
8 medjoul dates, stone removed
2 tbsp cold pressed, extra virgin coconut oil
1 tbsp maple syrup
2 tbsp almond milk, unsweetened
½ tsp vanilla extract or ground vanilla
1/8 tsp sea salt
2 tbsp raw chocolate powderFor the coating (optional):
200 g dark chocolate (80% or higher; dairy-free, if required)
More shredded coconut

In a small electric blender mix the shredded coconut with the dates, coconut oil, maple syrup and almond milk until you start getting a sticky dough. Add in the salt, vanilla and the chocolate powder.Divide the dough into rougly 12 portions and roll individual portions into a ball with your hands. Roll the sticky balls in more shredded coconut or melt the chocolate in a small bowl over hot water. Then roll the balls in the chocolate bath until fully covered, set aside, sprinkle with some extra coconut and set aside to dry. Refrigerate for at least 1 hour.
